Broiled Vegetable Medley


6-8 c. washed vegetables cut into bite size pieces
Avocado oil (about ¼ c.)
Garlic salt to taste
Pepper to taste


  1. Set oven to broil @ 450°
  2. Place vegetables on a foil lined cookie sheet
  3. Drizzle oil over vegetables
  4. Sprinkle salt and pepper to taste
  5. Put vegetables on 2nd rack from the top of the oven
  6. Cook vegetables 10 minutes
  7. Stir vegetables and rotate pan every 5 minutes until desired tenderness for a total time of about 25-30 minutes (being careful not to let vegetables burn)
  8. Serve immediately
