COCONUT CRUSTED CHICKEN

Ingredients

2 large chicken breasts cut into strips ¼-½” thick
½ c. coconut flour
2 eggs
1 t. honey or monk fruit
½ c. unsweetened shredded coconut
1 t. salt

Directions

Preheat oven to 425° and place rack a little above center in the oven
Line a baking sheet with tin foil or parchment paper
Combine coconut and salt in a bowl and set aside
In a small blender (or hand blender) blend eggs and honey or monk fruit until smooth and pour into a 2nd bowl
Put coconut flour into a 3rd bowl
Gather all bowls and chicken together into prep area
Toss chicken in flour, then coat in egg and then cover in coconut
Place on baking sheet

Cook for 25-30 minutes or until chicken is brown and done (internal temp 170°)

*You can place fresh vegetables (such as broccoli, cauliflower, bell peppers, onions etc) sprinkled with avocado oil and garlic salt around the chicken before cooking for a complete “sheet pan” meal. Stir vegetables half way through cooking time.
