1 c. coconut milk, canned or in carton (or rice milk, almond milk*, cashew milk*)
1 T. unsweetened cocoa powder
2 t. sweetener of choice (monk fruit, turbinado, raw cane, honey etc.)
(For stevia start with ¼ t. powdered extract, or 6 drops liquid, add more if needed)
¼ t. vanilla
dash of cinnamon
Blend all ingredients in a small blender until smooth.
Pour into a pan and heat until hot, but not boiling.
Makes 1 serving.
*You can make nut milk from most any nuts, but raw almond and cashew milk are the most popular, healthy and easy to make. To make about 1 cup milk: soak ¼ c. raw nuts covered in water overnight. Drain and put into a blender. Add ¾ c. water and blend a couple of minutes or until smooth but not hot. You may add more water if you like thinner milk. You may also strain the milk to achieve a smoother texture.
